Perfect for a mid afternoon pick me up or late night snack, these No Carb Protein Pancakes are lovely. They have so few ingredients and are so easy to make. I tend to make a few at a time and freeze them so I’ve always got them on hand when the ‘need to nibble’ arises!
You can either eat them fresh from the pan, defrosted from the freezer and lightly toasted in the toaster, or even cut them into slices to take out with you (cutting food up into bit sized portions takes you longer to eat it making you feel like you’ve had more than you actually have). I’ve just had one dunked in a tablespoon of Natural Almond Butter – delish!
To make one serving which, depending on how big you make them gives you 3 or 4 pancakes:
- 1 Scoop Chocolate Whey Protein
- 2 Egg whites
- 1 tsp baking powder
Just mix all the ingredients together with a fork, spray the pancake pan with low calorie oil spray and place all the mixture in 3 or 4 dollops on the pan, turning over when they start to brown, about 1 or 2 minutes each side.
Now just to say before you go ahead and make them that these pancakes are not loaded with sugar, flour and eggs so no they won’t taste like ‘proper’ pancakes that you might be used to so please don’t be disappointed! Not to say they aren’t good though, they are great to curb cravings when you feel the need to nibble – Go on and try them!
Tip: If you don’t use Chocolate protein or don’t have any then use unflavoured and add half a teaspoon of raw cacao or cocoa powder.
