Heart Warming Beef & Bean Chilli

I made a batch of this at the beginning of the week and it gets better every day! So easy to pull together , so good for you, plenty of protein, veggies and good carbs and so quick to re-heat days after!! Goes perfectly with a big dollop of Greek Yogurt on the side!

Think I’m going to have to make another load as now I’ve finished it I’m still craving more!

Makes about 6 Large Servings

  • 500g Lean Ground Beef
  • 1 Large White Onion, chopped
  • 1 540g Can Red Kidney Beans, rinsed and drained
  • 1 540g Can Black Beans, rinsed and drained
  • 1 Yellow Pepper, chopped
  • 1/2 Bag Spinach
  • 4 Cloves Garlic, sliced
  • 1 Large Carrot
  • 1/3 of a head of Cauliflower chopped into small florets
  • 2 Cups Passata or Crushed Tomatoes
  • 1 Tsp Cinnamon
  • 1 Green Jalepeno Pepper, de-seeded and finely chopped
  • 1-2 Tsp Chilli Flakes (depending on your taste!)
  • 1 Tsp Tumeric
  • Salt and Pepper to taste
  1. Add all spices in a large pan with the beef and onion with a little olive oil and saute for a few minutes
  2. Add the carrots and cauliflower, leave for a few minutes
  3. Then add everything else and leave to cook for about 30 minutesBeef & Bean Chilli

It’s that easy, Serve with some plain fat free greek yogurt on the side and enjoy…x
