Fruit ‘n’ Nut Loaf (with a hint of veg!)

So I’ve been experimenting with my loaves these past few weeks and found a lovely easy way of making a fruit, nut and veg protein bread! I love the smell of toasting Fruit Bread and have to admit a little part of me does miss eating Fruit toast so I’ve made my own version, it’s based on my Zucchini/Courgette loaf with a few added extras and it goes so well for Breakfast, toasted and spread with a bit of sugar free Jam or fruit puree or even peanut butter. My husband likes it for a snack just as it is without anything on, and even my son can’t get enough of it, it really is quite fab!

Makes 4 Loaves:

  • 2 Large Courgettes/Zucchini
  • 4 Scoops Protein Powder
  • 8 Egg Whites
  • 2 Cups Oats
  • 2 Tsp Baking Powder
  • 3 Tsp Cinnamon
  • 1 Cup Chopped Walnuts
  • 1/2 Cup Chopped Apricots
  • 1/2 Cup Raisins
  1. Grate the Courgettes/Zucchini and squeeze out as much water as you cancourgette
  2. Place in the Food Processor along with all the other ingredients except the walnuts, apricots and raisins
  3. Blitz everything together until totally mixed
  4. Add the apricots, raisins and walnuts and mix with a spoon into the mixture
  5. Divide the mix between 4 loaf tins (I use the disposable loaf tins that come in a box of 6. There aren’t any measurements on them but the box is about 6.5 inches by 4 ish!)   )uncooked fruit n nut
  6. Place in the Oven and bake for about 30 minutes when the top is nicely brown and you can pull a knife out clean
  7. Leave to cool cooked fruit n nut
  8. Either freeze as loaves or slice and freeze between parchment paper so you can just pull out a couple of slices easily for Breakfast Fruit n Nut loaf
