Banana Protein Pancakes

These Pancakes are lovely for Breakfast or at any part of the day, they are lovely and sweet for the days you just fancy a little something to satisfy that craving. For the days you have a more savoury tooth check out my Oat Protein Pancakes which are fab with a bit of Almond butter and some mixed berries

Makes about 4 Pancakes

  • 1/2 Banana mashed (chop the other half up and put it in the freezer for smoothies!)
  • 3 Tbsp Almond Meal (Ground Almonds)
  • 2 and 1/2 Egg Whites (5 tbsp.)
  • 3 Tbsp 1% Fat Cottage Cheese
  • 1 Scoop Unflavoured Protein Powder
  • 1/2 tsp Baking Powder
  • 1 Tbsp Flax Meal (Ground Flax Seeds)
  1. Mix all ingredients together and follow as above

Pancake mix

  1. Spray Pancake Pan with PAM or similar oil spray
  2. Place a tablespoon of mixture per pancake onto the pan and turn over after about a minute or when turning golden brownPancake pan
  3. Remove from Pan, serve with berries or just on their own…yummy

I just leave any extra pancakes to cool down, separate with parchment paper, put in a plastic bag and freeze for latershare(1)

Tip –  Plain Cottage Cheese and Plain Greek Yogurt can be interchanged for each other as they have basically the same nutritional content so feel free to use whichever you have more of!
