Easy and So comforting Grab ‘n’ Go PB and Jelly!!!

I am an absolute creature of habit (I blame my husband, I’m sure I never was in my younger days!)

Anyway….Tuesday is swimming day for the boys and afterwards we go for lunch and I have my favourite pack up. I have the same every Tuesday lunchtime with some apple slices before my afternoon workout, I never get bored of it and really look forward to it with a lovely cup of coffee. It totally hits the spot!

So what is it…?

Toasted slices of Zucchini Loaf  with a serving of Natural Peanut Butter (2 tablespoons) and a pot of Sugar Free Jam (I make my own Jam using Strawberries and Chia Seeds but a good quality no rubbish sugar free Jam works just as well).Zucchini loaf

In Canada and North America, Peanut butter and Jam (or Jelly) sandwiches is a really well known and loved snack. I’d never heard of it before we moved here and when I did hear of it I thought the idea was totally revolting….how wrong was I?!! I haven’t eaten the snack the ‘proper’ way but my version is totally yummy and Oh-So Healthy! Full of protein and flavour, perfect for a pre-workout meal.Peanut Butter & Jelly
