So What’s for lunch? – Easy, Wholesome and Gorgeous Pack-up

Because we are Eating Clean, unprocessed food, we try not to eat prepackaged or ready made products and that means we need to have our meals and snacks prepared in advance to prevent us from reaching for foods off plan or ducking into the canteen at work to raid the cookie tin! A major part of eating this way is preparation.

I tend to make lunches to take out with me most days especially if I’m not sure where I’m going to end up. With 2 little boys in tow its easier to be prepared!! Even more so if you are working with other people, temptation to give in to other people’s snacks is much less likely when you have your own pack up.

One of my favourite lunches at the moment is this one. Packed with veggies, healthy fats and protein it is so tasty and keeps really well if packed the night before in a Tupperware.

  • Handful Argula (Rocket)
  • Handful of CherryTomatoes halved
  • Handful of chopped cucumber
  • Half an Avocado sliced
  • Half a Cup of pre-made Cauliflower Rice
  • Handful of tinned Broad Beans, or Black Beans, rinsed and drained
  • Salt n Pepper
  • Tbsp Good Quality or Homemade Hummus
  • Handful Roasted Chickpeas
  • Lime Juice

Just arrange the veggies in the box and drizzle some lime juice over the avocado to prevent it turning brown. Take the hummus and chickpeas in separate containers to add at lunchtime. There is plenty of protein in this pack up but I might also take a couple of slices of turkey or chicken with me too.
